Cheesy Potato Pie
Cheesy Potato Pie
10" unbaked pie shell - regular or deep dish
3 medium potatoes, peeled and very thinly sliced
3 eggs
butter for frying
1 medium onion, finely chopped
2 t minced garlic
1 c evaporated milk
2 T. soy sauce
1 c shredded cheddar cheese
3/4 c shredded freshly grated Parmesan
salt and pepper to taste
Preheat oven to 325 degrees. After washing, peeling, and thinly slicing potatoes, saute them along with chopped onion in a couple of tablespoons of butter until they are soft but not mush. When they are almost done, add the minced garlic and a dash of salt and pepper. Drain the butter and let them cool.
Line the pie shell with even layers of the potatoes. Spread the grated cheeses over the top of the potatoes evenly. In a small bowl, beat the eggs. Add to them the evaporated milk and soy sauce. Whisk together and slowly pour over the top of the potatoes and cheese. Sprinkle with salt and pepper.
Bake in a 325 degree, preheated oven on the middle rack for about 30-40 minutes or until the top is golden and set. If you are using deep dish, you may need to bake it a little longer. Check often so it doesn't over bake and get dry. let stand a few minutes before serving, then slice like a pie.
